6 Things to Celebrate From My Day

 


Today was a good day. My youngest had a sleepover last night and when he came home, he smelled the pumpkin bread baking in the oven. He said it smelled amazing. I love pumpkin bread! And this recipe I have is the only one I use.

 

Here is the recipe:

 

Pumpkin Bread

 

5 large eggs

1 1/4 cup canola oil

1 15-oz can solid packed pumpkin

2 cups flour

2 cups sugar

2 3-oz packages cook and serve vanilla pudding mix

1 tsp baking soda

1 tsp ground cinnamon

1/2 tsp salt

 

In large bowl, beat eggs. Add oil and pumpkin. Beat until smooth. Combine remaining ingredients in a separate bowl then gradually beat into pumpkin mixture. Grease two 5 3/4x3x2" loaf pans. Pour batter into pans and bake at 325 degrees for 55 minutes or until toothpick inserted in center comes out clean. Cool for 10 minutes. Serve warm.

 

 

Here are six things to celebrate from my day.

 

1. I made pumpkin bread today. It was yummy!

 

2. My husband made manicotti for dinner and it was delicious.

 

3. My youngest and I decorated for Halloween today. We got most of it done. Tomorrow, we will put up webs and a few more tombstones. I will post a pic tomorrow!

 

4. I needed a decaf coffee for the Keurig. The only flavor I like so far is hazelnut cream (regular decaf coffee tastes gross). My husband was unable to find that flavor, though, so he got hazelnut. It's so good!

 

5. I finally had some time to watch a movie today. The movie was Mean Girls. It's the first time I saw it! It was hilarious.

 

6. We had some beautiful weather today. I spent some time outside and played with the dog.
